Ingredients

  • 1 cup Quinoa
  • 1 cup Green Lentils*
  • 1 Large Carrot shredded
  • 2 Medium Green Apples chopped
  • 1/2 Red Onion diced
  • 2 Tbsp Extra Virgin Olive Oil
  • 1/4 cup White Balsamic Vinegar
  • Salt and Pepper to taste
  • 1 cup Feta optional

Instructions

  • Cook quinoa and lentils according to directions on package.
  • Combine all ingredients in a large bowl.
  • Refrigerate until ready to serve.
