Instructions
Preheat oven to 425. Make sure the tofu is pressed and all excess water is removed.
Arrange the potatoes in a single layer on a lined baking sheet. Season with olive oil and salt. Put in oven for about 30-45 minutes, checking periodically.
Dice the tofu in 1/2 inch pieces. Toss with olive oil and salt. Arrange in a single layer on a different lined baking sheet. Put in oven for about 30 minutes, checking periodically.
About halfway through the tofu cooking time, add the chopped inions to the baking sheet. Do not season the onions.
With about 20 minutes left, arrange the kale on a lined baking sheet and toss with olive oil and salt. Roast in oven until kale is wilted and slightly browned.
Once all ingredients are done cooking in the oven, combine in a large bowl and mix. Scoop the scramble in individual serving bowls and top with the condiment of your choice.
