Greek Tofu & Chickpea Salad
Servings: 8
Ingredients
- 4 Tbsp lemon juice
- 1 tsp oregano dried
- 1 tsp salt
- ½ tsp crushed red pepper
- ½ tsp garlic powder
- 1 package tofu extra firm
- 1 can chickpeas rinsed and drained
Instructions
- Remove tofu from package and press to remove excess moisture. Dice tofu into ½" cubes.
- Combine all ingredients into a bowl or ziplock bag. Mix.
- Ideally, marinate for at least 1 hour, but not necessary.
- Serve on salad, bread, wraps, etc.
