Greek Tofu & Chickpea Salad

Ingredients

  • 4 Tbsp lemon juice
  • 1 tsp oregano dried
  • 1 tsp salt
  • ½ tsp crushed red pepper
  • ½ tsp garlic powder
  • 1 package tofu extra firm
  • 1 can chickpeas rinsed and drained

Instructions

  • Remove tofu from package and press to remove excess moisture. Dice tofu into ½" cubes.
  • Combine all ingredients into a bowl or ziplock bag. Mix.
  • Ideally, marinate for at least 1 hour, but not necessary.
  • Serve on salad, bread, wraps, etc.
